Watermelon, Mint & Feta Salad

Watermelon
1/4cup
Fresh Mint

Lime Juice
3/4cup
Feta Cheese
3Tbsp
Extra-Virgin Olive Oil
1/4tsp
Freshly Ground Pepper
1/2tsp
Maldon Salt
Instructions

Prepare the watermelon by cutting it into 1.5-inch cubes, removing the rind, and eliminating any seeds.

In a large bowl, combine the watermelon cubes and freshly chopped mint leaves.

Squeeze the juice of 1 lime (about 1.5 tablespoons) over the watermelon and mint.

Drizzle 3 tablespoons of olive oil over the salad.

Sprinkle the crumbled feta cheese over the salad, and season with freshly ground pepper and Maldon Sea salt to taste.

Gently mix the salad with a light hand to coat all the ingredients with lime juice, olive oil, and seasonings, being careful not to break the watermelon cubes.

Serve immediately as a refreshing and delicious side dish or snack.
