Sauteed Beet Greens

Have you ever bought a beautiful bunch of beets and just discard the leafy top? Most of us have. Not only are the stems and greens of beets edible, but they are nutritious and incredibly delicious. Beet greens are tender and have a mild, earthy flavour. You can add this as a side dish to any meat, on top of salads or added to bowls.

1-2bunches

Beet Greens

1Tbsp

Extra-Virgin Olive Oil

1/2tsp

Sea Salt

1/4tsp

Black Pepper

1tsp

Lemon Juice

Instructions

Cut the stems and leaves into 2-inch pieces. Then put the pieces into a colander and rinse them well.

Heat olive oil in a pan on med heat, add beet greens and season with salt.

Sautee until cooked and tender 8-10 mins. Add lemon (optional) and toss to combine.

Season with salt and pepper.
