Kohlrabi is a cruciferous vegetable. It is in the same family as broccoli, brussels sprouts, cauliflower and cabbage. It is very versatile and tastes like a combination between a mild radish and cabbage. Similar to the inside of a broccoli stem but slightly sweeter. This vegetable paired with feta and parsley is a great side dish with most meats on a nice addition to a salad or bowl.
Instructions

Preheat oven to 425°F.

Cut the tops off of the kohlrabi (if they have them).

Cut the bulb in quarters and peel the outer layer of skin.

Chop the kohlrabi into pieces approximately ½’’.

Drizzle and toss with olive oil salt and pepper to taste. Roast for 22-25 minutes flipping half way or until tender crisp.

Add parsley and crumble feta on top.

Toss and serve.
