Parmesan Roasted Zucchini

Roasted zucchini with parmesan is sure to be a crowd pleaser. Not to mention, it takes only ten minutes to make, from start to finish. This low-carb side dish is packed with flavour and the perfect addition to a salad or as a side to chicken.

Parmesan Cheese

Garlic Cloves

Avocado Oil

Sea Salt

Black Pepper

Preheat oven to 450°F

In a large bowl toss the zucchini with avocado oil, salt, pepper and garlic.

Arrange on a baking sheet, top with grated parmesan cheese and bake on centre rack for 5 minutes, next broil the zucchini for 3-5 minutes or until cheese is golden brown.

Substitutions: Don’t like garlic? You can omit it. Don’t have fresh garlic? You can used powdered. If you can’t have cheese you can omit it.
