These simple skillet green beans are a perfect healthy side dish. All you need is some fresh greens beans, a pot, lemon, butter, salt and pepper! They are so easy to make, healthy and taste delicious.

Add the green beans into a pot of boiling water until bright green in colour and tender but still a little crisp, 1-2 minutes. Drain and rinse with cold water.

Heat a large skillet over medium heat. Add the butter and greens beans and sauté for about 5 minutes. Add lemon zest, 1 tbs of lemon juice and season with salt and pepper.

Substitutions: Substitute olive oil for butter for a dairy free option. Option to omit lemon if desired. Add garlic or other herbs and spices depending on your taste preference. Such as chili flakes, basil or parsley. Add slivered almonds or crumbled feta for more protein and healthy fat.
