Zucchini Fritters

These are the perfect addition to Sunday brunch or if you just want a savoury snack. Fun fact: Zucchini belongs in the summer squash family and the seeds of summer squash vegetables are where you can find phytonutrients. These antioxidants can help to reduce inflammation and combat oxidative stress. Despite being associated with having a lot of water like cucumber, they have quite the impressive nutrient profile. One medium zucchini has over 50% vitamin C!

Fine Almond Flour

Avocado Oil
Instructions

Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.

Put a colander or a mesh sieve over a large mixing bowl. Grate the zucchini and then the potato with a cheese grater into the colander or mesh sieve and cover with the paper towel. You can put another small bowl or plate over top to help push any excess water out.

Once you have the majority of the water out, dump the water from the mixing bowl out and then add the grated zucchini and potato into the bowl.

Add the chopped onion, minced garlic, salt, pepper, eggs, and use your hands to mix everything together.

Add the almond flour and mix again with your hands.

Form the mixture into ½ inch to 1-inch small patties and spread out on a baking sheet.

Bake for 10 minutes on each side.

In a frying pan, heat the avocado oil. Once heated, add the fritters and cook 2-3 minutes per side or until your desired doneness. You will likely need to fry in a few batches.

Serve with your choice of dipping sauce. Sour cream, cashew cream, tzatziki, etc.
