Matcha is an ideal summer drink but at most cafes is quite pricey, here’s an easy recipe to make yours at home. This perfect refreshing drink comes together in less than ten minutes. Grassy, fresh matcha pairs so nicely with the sweet strawberries, ice and milk.

    Wash, hull and finely chop your fresh strawberries, add them to a small bowl with the salt and honey. Mash with a fork or mortar and pestle until smooth, (some chunks are okay). Set aside to macerate while you prepare the matcha.

    Mix the water and matcha together with a matcha whisk or shake vigorously in a small jar to suspend the green tea. The tea is ready when it appears frothy.

    Add your strawberries to the bottom of your glass, top with ice, then milk of choice and finally the prepared matcha. Garnish with fresh strawberries and serve immediately.

    Notes: Any leftover strawberry compote can be stored in the fridge for up to 3 days. Use whichever milk you please, I find unsweetened coconut or cashew work best. If using sweetened milk, adjust the amount of honey in the strawberries to your liking. When buying matcha look for a bright, lustrous green. Dull olive or brown hues indicate low chlorophyll content or oxidation. The matcha should also have a vibrant, vegetal fragrance and be a fine consistency like corn starch.
