Warm up your winter with this creamy tomato and tahini soup! It's a simple yet vibrant dish that'll bring comfort to even the coldest days. With just a handful of ingredients, you'll have a delightful bowl of goodness ready in no time.

Preheat your oven to 425°F (220°C).

On a baking sheet with raised edges, combine the whole tomatoes, roughly chopped onion, garlic, dried oregano, chili flakes (if using), and olive oil. Toss to coat, then roast for about 25 minutes or until the onions are nicely browned and the tomatoes are beautifully caramelized.

Transfer your roasted ingredients to a blender and add the tahini and broth. Blend until the mixture is smooth and velvety.

Pour the blended soup into a pot and gently simmer on low heat until it's warmed through. Taste and adjust seasoning as needed. Depending on the tomatoes you use, you may want to add a bit more salt, and a touch of sugar if desired.

Serve your hearty soup topped with an extra drizzle of tahini and a sprinkle of zaatar for an extra burst of flavour. Enjoy the comforting warmth of this delightful winter dish!
