Long Grain White Rice

2cups

Water

1Tbsp

Extra-Virgin Olive Oil

Yellow Onion

2bunches

Spinach

1tsp

Sea Salt

1/2tsp

Black Pepper

Garlic Cloves

Lemon

1/4cup

Fresh Dill

1/2cup

Feta

Instructions

Add the rice and water to a saucepan on medium heat and cook until most of the liquid has absorbed.

While the rice is cooking, in a skillet, heat the olive oil over medium heat. Add the onions, half of the salt, half of the pepper and sauté for three to five minutes or until the onions have softened. Add the garlic and sauté for another 30 seconds.

Add the spinach half of the lemon juice and cook down until the spinach has wilted. Add the rice and the remaining liquid to the skillet along with the rest of the lemon juice, salt, pepper and dill. Mix to combine.

Remove from the heat and transfer to a serving dish. Top with feta cheese and enjoy!
