This is a crowd pleasing recipe that’s perfect for those dark days of winter when you are looking for a bit of sunshine on your plate. Bright and herby salmon pairs well with the earthy turmeric flavour. I love having this dish mid week with a large green salad or some cooked quinoa on the side. This recipe is a great framework for cooking lots of types of fish, feel free to try with trout, cod or haddock. Pay attention to cooking times because they may differ for different varieties.

Smoked Paprika
1.5lbs
Salmon Filet

1
Preheat the oven to 300°. Grate or finely chop the garlic and combine with 2 Tbsp olive oil, ½ tsp sea salt, turmeric, and the zest of one lemon.

Wash and thinly slice the orange and remaining lemon. Arrange on a baking sheet in a single layer with ½ of the thinly sliced red onion. Place the salmon filet on top of the arranged citrus. Pour over the olive oil mixture. Bake in the oven for 30-35 minutes or until the fish is flaking and opaque in the centre.

While the salmon is cooking, finely chop the remainder of the red onion,1-2 Tbsp of lemon juice from the remaining (zested) lemon, chopped herbs and the remaining olive oil. Season with a pinch of sea salt until the flavours come together.

To serve, arrange the salmon on the citrus slices, breaking into generous pieces. Spoon over the herb dressing and enjoy.
