Sheet Pan Polenta with Sausage

Polenta is one of my favourite sneaky, easy meal makers! I love using the prepared tubes of polenta and adding them to a weeknight meal, it’s naturally gluten and dairy-free so easy for a variety of eaters. This is a super simple sheet pan meal that gets you crispy polenta, spicy sausage, sweet onions, crispy rapini and burst tomatoes in under an hour! A great option for getting out of that kitchen rut. I hope you enjoy it!

Italian Sausages
450g
Cooked Polenta
1
Red Onion
1Pint
Cherry Tomatoes
1/2tsp
Chili Flakes
1Tbsp
Italian Seasoning
1Tbsp
Extra-Virgin Olive Oil
1Bunch
Rapini
2Tbsp
Parmesan Cheese
Instructions

Preheat your oven to 425°. On a large baking sheet add your sausage, polenta, onions and tomatoes to the pan. Coat the ingredients in olive oil and spices and arrange on the pan in one layer (you may need to use two pans, that’s okay!)

Add your sheet pan to the oven and roast for 15 minutes. Remove the pan from the oven, flip your sausages and polenta and add your rapini to the sheet pan. Add back to the oven and cook again for 12-15 minutes, until everything is nice and golden brown.

Serve warm and top with fresh black pepper and parmesan.

Note: You may use whatever sausage you prefer like Turkey, Pork or Vegetarian. You may need to increase the amount of olive oil you use with some veggie sausages to avoid burning.
