Ground Flax

Coconut Milk
3/4cup
Pumpkin Puree
2Tbsp
Maple Syrup
1/4cup
Melted Coconut Oil
2tsp
Blackstrap Molasses
1Tbsp
Vanilla Extract
2cups
Gluten-free Oat Flour
1Tbsp
Baking Powder
1 1/2tsp
Pumpkin Pie Spice
1/4tsp

DIY Pumpkin Spice

PREHEAT: your waffle iron to the longer cook time setting, i.e. 3 on Cuisinart.

WHISK: the ground flax seeds and water together in a large mixing and let the mixture thicken for a few minutes.

ADD: in the wet ingredients to the flax mixture and mix well. Add the dry ingredients, stirring to remove any clumps.

SCOOP: ⅓ cup of the waffle batter into each waffle mold. Cook until cooked through and so that the waffles have a slight crispness to the outside. Enjoy with maple syrup, cinnamon, pecans, and/or yogurt.

STORE: leftovers in a freezer-safe container or bag and simply toast the waffles in the toaster when ready to eat.

Substitutions: Don’t have oat flour? Make your own by blending gluten-free oats in a high-powered blender or choose your favourite gluten-free flour blend. Results may vary.
