Orange Marmalade Turkey Legs

A little Thanksgiving dinner for two. Sometimes you just don’t want to make a big turkey, so we got you covered! This is super simple to make with minimal ingredients but with lots of flavour. And of course, this can be eaten all fall and winter long, too. It’s great to add to your cozy comfort meal list.

Orange Marmalade

Extra-Virgin Olive Oil

Sea Salt

Black Pepper

Turkey Drumsticks

Acorn Squash
1bulb
Fennel
Instructions

Preheat the oven to 400°F.

In a large bowl, combine the orange marmalade, lemon zest, garlic, half of the olive oil, half of the salt and half of the pepper. Add the turkey drumsticks and rub the marinade all over them. Set aside.

Add the squash and fennel to a baking pan and drizzle the remaining oil on top followed by the remaining salt and pepper. Toss to combine then spread out into an even layer.

Place the turkey drumsticks on top of the vegetables and top with any remaining marinade. Add some water or broth in the pan, about one inch all around. Roast for 1 ½ hours or until the turkey is cooked through. Flip the turkey halfway through. Serve and enjoy!

Notes: Refrigerate any leftovers in an airtight container for up to three days. Add some of your favourite herbs like rosemary, thyme and sage. Serve with some mashed potatoes. Cranberry sauce would be great too!
