Mashed Miso Celeriac

If you love mashed potatoes but can’t have them, this mashed celeriac recipe is for you! It’s full of umami, lower in carbs and has a similar consistency to mashed potatoes. This recipe is a good source of vitamin k and antioxidants.

Celeriac

Garlic Cloves

1Tbsp

Dark Miso Paste

2tsp

Extra-Virgin Olive Oil

Green Onions

2Tbsp

Fresh Parsley

Instructions

Boil the celeriac in a large pot of water for fifteen minutes or until tender. Drain the water.

Mash the celeriac with the garlic, miso paste and olive oil.

Garnish the celeriac with green onions and parsley.

Substitutions: No soy: omit the miso paste and use one to two tablespoons of beef broth.
