Lemon Keftedes (Meatballs)

Lamb keftedes, also known as meatballs, are a delicious alternative to classic meatballs. Lamb is an exceptional source of vitamin B12, protein, selenium, zinc and other vitamins and minerals. It is a common meat choice for a Mediterranan diet, which is particularly noted to support heart health.

Lean Ground Lamb

Yellow Onion

1Tbsp

Extra-Virgin Olive Oil

1/4cup

Fresh Parsley

Garlic Cloves

1/2tsp

Dried Oregano

1/2tsp

Ground Cumin

1/4tsp

Sea Salt

1/4tsp

Black Pepper

Instructions

Preheat oven to 425 degrees F and line a baking sheet with parchment paper.

In a medium bowl, add the ground lamb. Grate the onion over top so that any of the juices from it get in the bowl. Add the rest of the ingredients and mix with hands to combine.

Form the ground lamb into golf ball sized balls and spread out on the baking sheet. Bake in the oven for about 18 minutes. Turn over half-way through.

Heat a frying pan on medium-low heat and add the baked meatballs to the pan for 10 minutes or until they get a little browned.

Serve on a bed of your favourite greens and add some tzatziki if desired.

Store in an airtight container in the fridge for up to 3 days.
