High-Protein Chickpea Blondies

If you ever find yourself craving something a little sweet but want to ensure it provides you with fats, carbs and protein, then you’re in for a treat! These Protein Blondies are a great source of fibre and protein all thanks to the chickpeas, almond butter and collagen powder. While these Blondies are sweetened by maple syrup, the fibre and protein content can help stabilize your blood sugar. You even get a good dose of calcium and magnesium from these Blondies, which are great for muscle recovery and heart health. If you’re looking for your new favourite post-workout treat, this is it!

Chickpeas
1/2cup
Almond Butter
1/2cup
Maple Syrup
5Tbsp
Collagen Powder
1/2tsp
Baking Powder
1pinch
Sea Salt
1tsp
Vanilla Extract
1/2cup
Stevia-Sweetened Dark Chocolate Chips

PREHEAT: oven to 375F. Line a 9x9 baking pan with parchment paper.

PROCESS: the chickpeas in a food processor or high-powered blender until just smooth. Add all of the remaining ingredients except for the chocolate chips. Pulse until well-mixed.

ADD: the chocolate chips and mix well by hand.

POUR: and spread the batter into the baking pan. Bake for 30 minutes until the batter is set and a knife or toothpick comes out clean. Let the blondies set in the pan for 10 minutes before cutting them into squares.

Substitutions: Can’t have nuts? Use tahini instead of almond butter. Vegan? Try swapping out the collagen for an unflavoured or vanilla flavoured vegan protein powder.
