Grilled Apricots with Prosciutto

Move over peaches (but not really, we love peaches), apricots need some love too! This appetizer dish will definitely be a crowd pleaser with its flavour profiles. Sweet, savoury and a little bit of tartness! Apricots are in the same family as peaches, kind of like their cousin! Despite being small, they are a nutrient-dense fruit that can help support your liver, your eyes and your digestion.

Coconut Oil

Apricots
8slices
Prosciutto
113g
Soft Goat Cheese
1/4cup
Fresh Basil
3Tbsp
Honey
1/2tsp
Flakey Sea Salt
Instructions

Heat grill to medium-high and lightly brush each apricot half with some coconut oil.

Place the apricot halves, cut side down, on the grill and grill for about 5 minutes until you see grill marks.

Once the apricots are grilled, assemble them, cut side up, on a serving plate.

Using your hands, break off pieces of the goat cheese and top each apricot half with a piece or place wherever you want to. It doesn’t have to be perfect!

Do the same with the prosciutto slices.

Garnish with chopped basil and flaky salt.

Lastly, drizzle honey all over.

Store any leftovers in an airtight container in the fridge for up to 3 days.

Note: I used one small package of goat cheese that was 113g.
