When Greeks fast or remove certain food groups for various religious events throughout the year, this is a popular dish to be had. It can be served as a main or a side dish. It is also perfect for the colder months as a comfort food.

    In a large pot or dutch oven, over medium heat, add the olive oil, onions and garlic. Sprinkle in some sea salt, stir to coat and sauté for four to five minutes or until the onions have softened.

    Add the chopped tomatoes, crushed tomatoes and simmer for another four to five minutes. Add some broth if needed.

    Add the beans, potatoes, chicken broth, water, remaining salt, black pepper, parsley and oregano. Stir to combine.

    Bring to a boil then lower the heat to a simmer. Simmer with the lid askew for 45 to 50 minutes or until the beans are soft and the potatoes are fork tender.

    Divide into bowls and enjoy!

    Notes: Serve with feta cheese and bread on the side. Cook with fresh herbs like dill, parsley and oregano instead of the dried herbs.
