These 3-ingredient pecan clusters are made in minutes and gone in seconds. Dates pair perfectly with chocolate and pecans to create an energizing snack that feels more like dessert.
Instructions
1
In a double boiler, melt the chocolate over low heat.
2
Remove pits from dates and set date halves aside.
3
Push 2-3 pecan halves, flat side up, into each date half. You might have to mold the date around the pecans slightly so get them to hold.
4
Using a spoon, add a dollop of melted chocolate to each cluster on top of the pecan halves. Smooth out the chocolate slightly with the back of the spoon so a flat even layer is achieved. Place the clusters in the fridge to cool until hardened, about 15 minutes.
5
Remove the clusters from the fridge. Flip them over and then repeat step 4 with the remainder of the melted chocolate, this time drizzling the chocolate all over the cluster so it is well coated. Place back in the fridge to set for at least 20 minutes.

Substitutions: If you don't like pecans you can use walnuts instead.
