Coffee Rubbed Pork Tenderloin

Coffee on meat! I know it sounds wild but trust me, it’s delicious! Super easy to prep with some low maintenance grilling and you’re good to go. The rub makes a nice crispy blackened layer on the outside of the pork. So good. Give it a try!

2 Tbsp

Ground Coffee

3 Tbsp

Coconut Sugar

1 Tbsp

Chili Powder

1 tsp

Garlic Powder

1 tsp

Sea Salt

1/2 tsp

Black Pepper

1-1 1/2 lbs

Pork Tenderloin

2 Tbsp

Extra-Virgin Olive Oil

Instructions

In a small bowl, combine the ground coffee, coconut sugar, chili powder, garlic powder, salt and pepper.

Add the pork tenderloin to a shallow bowl or on a large plate. Rub the olive oil all over. Add half of the coffee mix to one side and rub all over, completely covering the side. Flip over and repeat on the other side. Make sure the rub is really packed on.

Preheat your grill to medium-high heat, around 400 degrees F. Once heated, place pork on the grill and close the lid.

Grill for about 20 to 25 minutes, flipping half-way through, or until the pork reaches your desired doneness. You can also sear the outsides of the pork close to the end.

Let the pork tenderloin rest for five to ten minutes. Cut into slices about 1-2 inches thick.

Serve with your favourite sides. Enjoy!

Notes: *Silverskin is like a tough connective tissue that is on the outside. It’s often chewy and hard to break down during cooking. It almost looks like a layer of tape. Peel it a little bit and then take a sharp knife under it to help you get it off. Refrigerate leftovers in an airtight container for up to three days.
