Create a spooky dessert for your favourite ghouls and goblins with these chocolate mint green monster cookies! The secret ingredient that turns these cookies green is chlorella, a very nutritious dark-green algae high in vitamin A, iron and zinc. You’ll feel good about serving up these green Halloween treats!

Preheat oven to 350℉. Line a 9x9 baking pan with parchment paper. Brush a bit of butter under the parchment paper to help it stick.

Cream the sugar and butter in a food processor with the paddle attachment for about three minutes. Add the flour, chlorella, and peppermint extract and stir until combined.

Press the cookie dough into the prepared pan, using a flat-bottomed glass to press it evenly into the pan. Cut the cookies into 24 rectangles. Prick evenly with a fork. Bake for 20 to 25 minutes or until the edges are lightly browned.

Remove the cookies from the oven and cut through the same lines to reestablish the cookie outlines. Let the cookies cool in the pan for at least 10 minutes.

Meanwhile, melt the chocolate chips and coconut oil in a double boiler. Remove from the heat.

Dip each cookie into the chocolate to create hair. Put two dots of chocolate on each cookie and stick two eyeballs on the dots. Use a toothpick to draw a smile and stitches. Feel free to do other face designs!
