You can’t go wrong with these maple syrup sweetened granola bars. With a hint of flakey salt sprinkled on top, it’s like the best of both worlds. Oats are packed with fibre, which is beneficial for regulating blood sugar, lowering cholesterol levels, digestive health, hormonal health and more. It’s quite the powerhouse! This recipe also includes healthy fats, which also have similar benefits that fibre has, from coconut oil and cashew butter.

Line an 8x8 baking pan with parchment paper.

In a medium saucepan on low heat, melt the coconut oil.

Add in the oats and maple syrup and stir to coat the oats. Continue to stir for 5 minutes. Keep an eye on the oats so that they don’t burn.

Add oats to a mixing bowl along with the cashew butter and sea salt. Mix to coat the oats.

Let the mixture cool for 10 minutes before adding the chocolate chips. Once slightly cooled, fold in the chocolate chips (they will melt a little bit).

Add the oat mixture to the baking pan and press down firmly so that the oat mixture is flattened and fills the entire pan.

Put in the freezer for 30 minutes. When ready to serve, top with flakey salt and cut into bars. You can store them in the fridge or freezer in an airtight container.

Note: You can also use a silicone granola/cereal bar mould (easy to pop out when ready).

Substitutions: Use almond butter or peanut butter instead of cashew butter. Use dried cranberries instead of chocolate chips.
