This recipe is a great start to a slow morning or cozy weekend. Using up some leftover potatoes and a few odds and ends it comes together in under half an hour in one skillet with minimal effort. I would love you to experiment and use this recipe as a template. Try mixing in whatever veggies you have on hand and adding your favorite spices. Enjoy this meal any time of day!

Instructions

Put your skillet on medium heat and add 1 tbsp of your olive oil. Once hot add your chopped sausage pieces to the pan and cook thoroughly. Make sure to not over mix to let the side of the sausage brown and get crispy.

Once the sausage is cooked though add your onions and pepper to the pan, cook those down until they are soft then add in your potatoes. Add you second tablespoon of oil and stir.

Give the potatoes a bit of time to brown on each side (about 5 minutes) and season with salt and pepper. Once the potatoes are browned add you water to the pan and scrape the bottom of the pan.

Make four small holes in the potato mixture and crack your egg in them. Cover the pan for 4-6 minutes. Check the eggs for doneness and remove them from the heat when they are at your preferred consistency.

Garnish the skillet with chopped scallions and hot sauce and serve.
