Apple butter is a rich and flavourful condiment and perfect for the cold fall and winter season. Despite the name there is no butter involved. Made by slowly allowing the apples to break down and caramelize with a few spices, this dish is a perfect topping for oats, yogurt, toast, cheese boards and even for serving to babies. Try this out when you have an abundance of apples and enjoy!
Instructions

Place cored, sliced and peeled apples into a large slow cooker or crock-pot.

Add water, vinegar and spices. Stir all ingredients together to coat the apples, cover and let it cook for 1-2 hours on low.

The liquid will reduce and the apples will be very soft, dark in colour and smell heavenly. Remove from the heat then use an immersion blender or potato masher to further break down the apples until smooth.

Once the apples are pureed, turn the slow cooker on high and heat the apple butter uncovered for about 15 minutes. This will help it thicken and caramelize.

Once the apple butter is the consistency you like, remove from heat and let the apple butter cool for 30 minutes before transferring into airtight containers for storage. Let the apple butter cool completely in the containers or jars before placing in the fridge.

For storage: apple butter will keep in the fridge for up to 3 weeks or up to a year the freezer
