Nothing like a big bowl of oats to get you out of bed on chilly mornings. We took it up a notch with this Pumpkin Spiced Porridge by using chewy steel cut oats, adding chia seeds for extra fibre, and being heavy on the spices for a flavourful, nourishing breakfast with endless topping possibilities.

Instructions

    In a small saucepan, combine the pumpkin puree, salt, spices, maple syrup and milk together. Bring to a simmer then stir in the oats and reduce heat to medium low and continue to simmer until oats are tender, about 15-20 minutes.

    Divide between two bowls and serve with desired toppings.

    Topping Ideas: Almond Butter, Pumpkin Seeds, Pecans, Coconut Yogurt, Granola, Sliced Apple or Pear, Apple Sauce, Berries, more milk, Maple Syrup, Honey

    Substitutions: Substitute rolled oats for steel cut. Just change cook time and liquid amount accordingly. Substitute the pumpkin puree with apple sauce for an apple spiced version
