Tofu & Rice Mason Jar Salad

Another easy and portable way to enjoy lunch! This meatless option uses tofu, an easy tamari and sesame dressing along with cooked rice and cabbage to round out the meal. This is great for gluten free, low sugar, vegetarian and IBS conditions or diets. This will keep in the fridge for up to 3 days.

Tamari

1tsp

Rice Vinegar

1/2tsp

Sesame Oil

1/4tsp

Honey

100g

Extra Firm Tofu

1/3cup

Jasmine Rice

1/4cup

Red Cabbage

1/4cup

Cucumber

3/4cup

Spinach

Instructions

In a small bowl, whisk together the tamari, vinegar, sesame oil, and honey.

Add the dressing to the 500mL mason jar.

Layer the tofu, rice, cabbage, cucumber and spinach in that order. Seal and place in the fridge until ready to eat.

Shake well when ready to eat and pour into a bowl to enjoy.

Substitutions: No tamari, use soy sauce or coconut aminos. No honey, use maple syrup. No rice, use another type of grain. No red cabbage, use another type of cabbage or omit.
