Spicy Chili Garlic Noodles

These noodles are so tasty and easy to make, they make the perfect lunch or quick dinner. They’re a great way to get lots of immune loving ginger, garlic and chillies into your day too. This meal comes together in minutes and is so spicy and satisfying. Try adding your favourite greens like bok choy or spinach for extra flavour and nutrients

Rice Noodles
3Tbsp
Avocado Oil
2Tbsp
Soy Sauce
1 1/2Tbsp
Chili Oil
3Tbsp
Rice Vinegar
1Tbsp
Chili Flakes
1Tbsp
Sesame Seed
3cloves
Garlic
1inch
Ginger
2thinly sliced
Green Onion
1/2cup
English Cucumber
2fried
Large Eggs
Instructions

Cook your noodles according to package instructions until tender, drain, rinse and set them aside. In a small skillet, heat your avocado oil on medium heat.

In a bowl add your chili oil, soy sauce, black vinegar, sesame seeds, garlic and ginger.

Once the oil is hot and sputtering, pour over the chili oil mixture and let sizzle for 1-2 minutes. Mix thoroughly and add your cooked noodles to the bowl. Coat the noodles in the sauce and divide into two bowls.

Top the bowls with cucumber, scallions, a fried egg and sesame seeds.
