Sheet Pan Salmon Tacos with Green Goddess Sauce

These easy, weeknight friendly sheet pan salmon tacos come together quickly and pack lots of flavour. Serve the tacos with shredded cabbage, corn and a tasty cilantro yogurt green goddess sauce.

Salmon
1 Tbsp
Avocado Oil
3/4 tsp
Chili Powder
3/4 tsp
Smoked Paprika
1/2 tsp
Kosher Salt
2 tsp
Honey
3/4 cup
Yogurt
1/4 cup
Mayonnaise
1 cup
Cilantro

Garlic Cloves
1
Anchovy
1 Tbsp
Lemon Juice
1/2 tsp
Kosher Salt
1-2 tsp
Water

Purple Cabbage
1 1/2 cups
Corn

Jalapeno Pepper
Instructions

In a bowl, combine the cubed salmon with oil, chili powder, smoked paprika, salt and honey. Let sit at room temperature while you prepare the sauce.

In a blender combine the yogurt, mayonnaise, cilantro, garlic, anchovy, lemon juice and zest and salt. Blend until smooth, adding water if necessary.

Heat the oven to broil (high).

Transfer the salmon to a sheet pan and spread out evenly. Broil for three to five minutes, until the salmon is cooked through and browned slightly on the edges.

Assemble the tacos by spooning some of the sauce, followed by the cabbage, salmon, corn and jalapeño (if using). Drizzle with more sauce. Enjoy!
