Savoury Cheddar & Egg Waffles

Switch up traditional sweet waffles with a savoury one, made with almond flour, egg and cheddar. Serve with 2 quail eggs or 1 regular fried egg to amp up the protein. This is great for gluten free, kosher, low sugar, IBS and paleo conditions or diets.

Mayonnaise

Kosher Salt

Preheat the waffle iron.

In a medium sized bowl, add the almond flour, egg, cheddar cheese, mayonnaise and salt and pepper and mix well to combine. The texture will be thick.

Once the waffle iron is hot, add half the batter and close the lid. Cook for about 4 minutes, until the waffle is cooked through and releases. Remove and repeat with the remaining batter.

While the waffle is cooking, heat a small skillet over medium heat and add any oil (if needed). Once hot, add the eggs and cook until the whites are set and the yolk is still runny.

Add the waffles to a plate, top with the fried eggs, chives and salt and pepper. Enjoy!

Substitutions: No quail eggs, use 1 large egg instead. No almond flour: use all purpose flour, or gluten free all purpose flour. No fresh chives: use green onion, or another fresh herb instead.
