One Pot Pasta with Leek, Bacon & Peas

This one pot pasta is made with caramelized leeks, crispy bacon and peas for a comforting and easy weeknight dinner. The pasta cooks all in one pot leading to tons of flavour and less clean up.

Frozen Peas

Parmesan Cheese

Lemon

Chives

Kosher Salt

1/4tsp

Black Pepper

Instructions

Heat a large pot over medium heat. Once hot, add the bacon and cook until browned and crispy. Remove with a slotted spoon and set aside on a paper towel lined plate.

Add the leeks and sauté until softened and just starting to brown on the edges, about ten minutes, adjusting the heat as needed. Add the garlic and cook until fragrant.

Pour in the water and scrape up any browned bits. Add the spaghetti and cook according to package directions, tossing often to ensure it stays coated in the water, adding more water if needed. With three minutes remaining, add the peas.

Toss in the parmesan, lemon juice and zest along with the bacon and chives. Season with salt and pepper and toss to combine. Serve and enjoy!
