Halloumi Caprese Salad

Try this twist on a traditional caprese salad and swap out the mozzarella for some halloumi. Dollop on your favourite pesto for a little extra something special. This recipe is great for gluten free, grain free, mental health, diabetes, and low sugar conditions or diets.

Halloumi

1/2tsp

Za'atar Spice

1tsp

Extra-Virgin Olive Oil

3large

Heirloom Tomatoes

1/2cup

Cherry Tomatoes

3Tbsp

Pesto

1stalk

Fresh Basil

1/2tsp

Sea Salt

1/4tsp

Black Pepper

Instructions

In a small bowl, toss the sliced halloumi with za’atar and oil.

Heat a skillet over medium heat. Add the halloumi and grill on each side until browned, about three to four minutes per side. You can also grill this over medium-high heat for three to four minutes on the BBQ as well.

Place the tomatoes on a large platter or plate. Dollop pesto over top of the tomatoes. Add the halloumi on top. Garnish with fresh basil and season with salt and pepper and a drizzle of extra virgin olive oil.
