Grilled Pork Shoulder with Olive Salsa

Pork shoulder is an inexpensive cut that can be cooked similarly to a steak and is great for grilling. You can typically find pork shoulder steak cuts at most butcher shops. Serve these grilled pork shoulder steaks with an easy and flavourful castelvetrano olive salsa.

Smoked Paprika

Boneless Pork Shoulder Steaks

Castelvetrano Olives

Serrano Pepper

In a shallow bowl, combine three tablespoons of the olive oil, half the lime juice plus zest, salt, cumin, smoked paprika and two tablespoons of the cilantro. Mix well. Add the pork steaks to the bowl and rub the mixture all over. Marinate in the fridge covered for two hours.

In a medium sized bowl, combine the olives, serrano pepper, remaining olive oil, remaining lime juice and remaining cilantro and toss to combine.

When ready to cook, heat the grill to high. Remove the pork steaks from the marinade and let excess drip off. Place on the grill and cook for about five to six minutes per side, until charred and cooked through to 145℉. Let rest for at least five minutes before serving.

When ready to serve, top with the olive salsa mixture and garnish with flaky salt. Enjoy!

Substitutions: No serrano pepper: use jalapeño instead.
