Greek Village Salad

Greek village salad, called Horiatiki, traditionally doesn’t have any lettuce. It is so simple and rustic because you can chop the veggies into chunky pieces followed by a few more ingredients and that is it! You don’t have to worry about measuring things but here is a rough estimate of how to make it.

1large

Tomato

1/4large

Cucumber

1/2small

Red Onion

1/4tsp

Sea Salt

1/2tsp

Oregano

2Tbsp

Extra-Virgin Olive Oil

1/3cup

Kalamata Olives

75g

Feta Cheese

Instructions

In a large bowl, add the tomato, cucumber, red onion, half of the olive oil, salt, half of the oregano and toss to combine.

Add in the kalamata olives and toss again.

Place a big block of feta on top, drizzle with the rest of the olive oil and oregano. Taste and add more salt and olive oil if desired.

Divide onto plates, breaking a piece of feta off for each serving.

Serve with your favourite protein like steak, chicken or fish.

Notes: You can add sliced green bell pepper. Crusty bread is so delicious with this!
