Avocado Lime Popsicles

Creamy and dreamy with a tangy punch from the lime juice! These are PERFECT for those hot days when you need something cold and refreshing. These popsicles are packed with healthy fats from the coconut milk, avocado and cashews! We’re a big fan of healthy fats over here, for many reasons. They are anti-inflammatory, support heart health, brain health, hormones and so much more.

Full Fat Coconut Milk

Avocado

1cup

Raw Cashews

Lime

2Tbsp

Maple Syrup

1/4tsp

Sea Salt

Instructions

Add all ingredients into a high-powered blender and blend until smooth. If it is too thick for blending, you can add 2-3 tablespoons of filtered water. Taste and add more lime if you want them to be sourer.

Pour into your favourite popsicle moulds and freeze for 4-6 hours (overnight for best results).

Notes: To soak cashews, place them in a bowl and add enough filtered water to cover them. If possible, soak for at least 4 hours. If you’re pressed for time, soak for 30 minutes.
